Southern Apple Crumble (recipe found at www.bettycrocker.com)
Filling:
3 large apples, peeled, coursely chopped (I use 2 granny smith and 1 other one, any kind)
1/2 cup sugar
1/4 cup packed brown sugar
1 to 2 tsp ground cinnamon
1/4 cup cold butter, cut into small pieces
Topping:
1 pouch (1 lb. 1.5 oz) Betty Crocker oatmeal cookie mix
1/2 cup butter, melted
1/2 cup chopped pecans (optional)
1. Heat oven to 300 degrees. Spray bottom and sides of 8-inch square glass baking dish with cooking spray. In large bowl, toss filling ingredients. Spread mixure in baking dish.
2. In same large bowl, stir cookie mix and melted butter until crumbly (don't stir too long or it will turn all mushy!). Sprinkle over filling.
3. Bake 40 minutes. Remove from oven & sprinkle with pecans. Bake 15 to 20 minutes longer or until topping is golden brown. (obviously if you opt against using pecans you can ignore this part and just bake for a straight 55 to 65 min.)
Serve warm with some vanilla icecream! :)
Makes 9 servings
also..you can exchange the apples for peaches if you want!
